Innovative and award-winning Master baker and an acclaimed author of 6 baking books with over 25 years of experience in the business and teaching with a passion in the art of Baking. A master’s degree graduate from the Institut National de Boulangerie-Pâtisserie (INBP) in Rouen, INBP professor team for three years and then helped set up the Bakery Training Department at the Ecole Hôtelière de Lausanne. A two-time Meilleur Ouvrier de France competition finalist, Jean-Marie conducts training courses all over the world.
He is known for his signature classic pastries like Kouign-amman, Croissant, and exceptional Viennoiseries, recipes and training that you can now experience in Bali.
