Innovative and award-winning Master baker and an acclaimed author of 6 baking books with over 25 years of experience in the business and teaching with a passion in the art of Baking. A master’s degree graduate from the Institut National de Boulangerie-Pâtisserie (INBP) in Rouen, INBP professor team for three years and then helped set up the Bakery Training Department at the Ecole Hôtelière de Lausanne. A two-time Meilleur Ouvrier de France competition finalist, Jean-Marie conducts training courses all over the world and currently in Asia as a consultant.
He is known for his signature classic pastries like Kouign-amman, Croissant, and exceptional Viennoiseries, recipes and training that you can now experience in Bali.
I am a 22-year-old French baker, gold medalist at WorldSkills France and bronze medalist at the WorldSkills World Championship. My career is driven by a deep passion for bakery craftsmanship, technical excellence, and knowledge transmission. I have worked in renowned establishments such as in one of the best bakeries in Paris, which supplies bread to the Élysée Palace and the President of the French Republic,

Specializing in viennoiserie and bread making, I had the privilege of training under several Meilleurs Ouvriers de France, including Sebastien Chevalier, Olivier Magne, and Cyril Vanderstuyft. After multiple international experiences and competitions, I am now continuing my journey as a trainer at the Bali Baking Institute, with the ambition to share and promote French bakery excellence worldwide.
